My Grandma Original 'Cendol'


This dish is named after its the main ingredient, Cendol , short strands of cooked dough made with green pea flour and the green juice of pandan leaves. When we were children we called cendol 'green worms". It is served with shaved ice and plenty of fresh santan (coconut cream) and gula melaka (palm sugar).

Ingredients

* i) 100 g of palm sugar (or brown
* sugar)
* ii) 2 pandan leaves (or pandan
* artificial flavour)
* iii)One packet of cendol
* iv) 100 g of red beans
* 500ml of fresh coconut milk
* v) 2 tablespoons of water
* Some ice-cubes


Directions

1. Smash or chop the palm sugar/brown sugar up. Place it in a saucepan with a little water, just enough to cover. On low heat, melt the sugar. Let it cool.

2. Now, the coconut, put it into a muslin bag to squeeze over a bowl to get the coconut milk.

3. The Cendol is almost ready. Place some cendol in a bowl, shave some ice onto it. Pack the ice a bit so it doesn't melt so quickly. A mini MT Fuji shape is the default. Drizzle with coconut milk and palm sugar according to taste.

Mock Apple Pie

INGREDIENTS (Nutrition)

* 475 ml water
* 200 g white sugar
* 6 g cream of tartar
* 30 buttery round crackers
* 1 g ground cinnamon
* 15 ml lemon juice
* 1 recipe pastry for a 9 inch single crust pie
*
* 60 g crushed buttery round crackers
* 110 g packed brown sugar
* 1 g ground cinnamon
* 75 g butter, melted

DIRECTIONS

1. Preheat oven to 425 degrees F (220 degrees C).
2. In a saucepan over medium high heat, combine the water, sugar and cream of tartar; bring to boil.
3. Drop in whole crackers and boil for 5 minutes. Pour mixture into pie shell; sprinkle with cinnamon and lemon juice.
4. Mix together the crushed crackers, brown sugar, cinnamon and butter; sprinkle over pie filling.
5. Bake for 15 minutes and reduce heat to 375 degrees F (190 degrees C) and continue to bake for 15 to 20 minutes longer. Serve warm.

Apple Crisp IV

INGREDIENTS (Nutrition)

* 2 cups all-purpose flour
* 2 cups rolled oats
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1 1/2 cups packed brown sugar
* 1 1/2 cups butter
* 2 quarts peeled, cored and sliced apples

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut butter into mixture until crumbly.
3. Take half of the mixture and pat it into the bottom of a 9x13 inch baking dish.
4. Cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture.
5. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until apples are tender.

Slow Cooker Thanksgiving Turkey

INGREDIENTS (Nutrition)

* 5 slices bacon
* 1 (5 1/2 pound) bone-in turkey breast, skin removed
* 1/2 teaspoon garlic pepper
* 1 (10.5 ounce) can turkey gravy
* 2 tablespoons all-purpose flour
* 1 tablespoon Worcestershire sauce
* 1 teaspoon dried sage

DIRECTIONS

1. Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain and crumble.
2. Spray a slow cooker with cooking spray. Place turkey in the slow cooker. Season with garlic pepper. In a bowl, mix the bacon, gravy, flour, Worcestershire sauce, and sage. Pour over turkey in the slow cooker.
3. Cover slow cooker, and cook turkey 8 hours on Low.

CHOCOLATE CAKE

INGREDIENTS:
• 2 cups white sugar
• 1 ¾ cups all-purpose flour
• ¾ cup unsweetened cocoa powder
• 1 ½ teaspoons baking powder
• 1 ½ teaspoons baking soda
• 1 teaspoon salt
• 2 eggs
• 1 cup milk
• ½ cup vegetable oil
• 2 teaspoons vanilla extract
• 1 cup boiling water

METHOD:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.


TOPPING:
1 stick (1/2 cup) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

SIMPLE CHOCOLATE CAKE


Ingredients
· 4 ounces self raising flour
· 4 ounces castor sugar
· 2 level tablespoons cocoa
· pinch of salt
· 2 ounces melted butter
· ½ cup milk
· 1 egg
· a little vanilla essence

Method

Place all ingredients into a bowl in the above order. Beat well for 2 minutes. Pour into a greased 7 inch cake tin. Bake for 35-40 minutes in 350°F.
